Give the Mekong Delta two days and one night. Drive from Ho Chi Minh City to Cai Be or Ben Tre (1.5–3 hours) for orchards and small canals, sleep in Can Tho (about 2 hours from Saigon by expressway), and reach the Cai Rang floating market at dawn — busiest about 5:30–7:30, 30 minutes by boat from Ninh Kieu pier. Best weather: December–April; best fruit: May–November.

Cai Rang or Cai Be floating market?
Cai Rang, near Can Tho, is the largest and liveliest floating market left in the delta. Wholesale boats hang a sample of what they sell — pineapples, pumpkins, sweet potatoes — from a tall pole, and small sampans weave between them selling noodle soup and iced coffee. Go at dawn.
Cai Be, in Tien Giang, is smaller than it once was because roads and bridges now carry much of the trade, but it is closer to Ho Chi Minh City and pairs well with the French-era houses of Dong Hoa Hiep and the orchards of Tan Phong islet. If you only see one market, make it Cai Rang.
Our favorite two-day route
- Day 1, 7:30: leave Ho Chi Minh City by private car for Cai Be (about 3 hours).
- Day 1, late morning: sampan through the small canals of Tan Phong islet, lunch of elephant-ear fish in an orchard garden.
- Day 1, afternoon: continue to Can Tho; evening walk along the Ninh Kieu riverfront.
- Day 2, 5:00: boat from Ninh Kieu pier to Cai Rang; breakfast of noodle soup on the water at sunrise.
- Day 2, morning: a rice-noodle workshop and the Phong Dien orchards, then back to Ho Chi Minh City (about 2 hours) or fly onward from Can Tho.

- Sleep in the delta. The floating markets happen at sunrise; nobody arriving from Saigon the same morning sees them at their best.
- Choose small boats. A sampan rowed through narrow canals is the delta's real magic; big tour boats only fit the main river.
- Skip the snake-wine and photo stops on mass-market My Tho tours; ask instead for a family workshop making rice paper or coconut candy.
- Bring a light rain jacket from May to November; showers are short but heavy.
